How to boil rice noodles
On high heat bring a pot of water to a rolling boil. In the meantime place a colander in the sink and fill the sink with COLD water. The water has come to a boil. it is the time to put the noodles as desired in the pot. Be sure there is enough water in the pot to completely immerse in the noodles. Still on the heat, let the pod of water come back to a boil.
Once it has come back to a boil, lower the heat just a tad bit so that it does not boil over. But it should still be boiling.
Separate the noodles using chopsticks or fork.
Check the noodles about 3-4 minutes. Take a piece of a noodle out and eat it.
Once
they?re just about done cooking, say about 95% then turn off the heat.
Place a lid on the pot and let the noodles sit for a minute.
Then take the pot over the sink and pour half of the water out in the other EMPTY sink.
Pour the rest of the pot including the noodles into the sink filled with COLD water.
Shake the colander around a bit. Bring it over the side. Remove the stopper.
Rinse under the COLD water. Put the stopper back in.
Fill the sink up again with COLD water.
Washing the noodles in a tub of water for the 2nd times.
You can see this time there is less starch in the water.
Now this time to turn on the HOT water.
Once the noodles feel warm you can turn off the water.
Place the colander on a plate for the noodles to air dry.
If you?re going to be making a whole bag of vermicelli noodles then separate them into 2 colanders to air dry.
